Corn starch is one of the high molecular weight carbohydrates. In combination with water, a solution is obtained which, despite its hypertonic character, has a low osmolality.
Osmolality indicates how water and other substances can penetrate through the cell membrane into the cells' interior. The lower the osmolality, the easier and faster the transport through the cell membrane is.
